Состав жирных кислот, фитостеринов и суммарное содержание антиоксидантов семян Morus L.

Аннотация
В настоящей работе впервые представлены результаты изучения суммарного содержания антиоксидантов в семенах Morus L. А также изучили состав жирных и стериновых кислот семян плодов шелковицы Morus L.: полиморфного вида Morus alba (белоплодная, розовоплодная, черноплодная) и Morus nigra (сорт Хартут). В результате исследований идентифицировано 12 жирных кислот, основными из которых были линолевая, пальмитиновая олеиновая и стеариновая кислоты. Преобладающей жирной кислотой во всех образцах являлась линолевая, пределы которой варьировали 67.5–79.0%. Стеринов было обнаружено 15, при этом на долю β-Ситостерина приходится около 90%. Определение суммарного содержания антиоксидантов семян M. alba (белоплодная, розовоплодная, черноплодная формы) и M. nigra (сорт Хартут) выявило накопление антиоксидантов во всех образцах. Наибольшее суммарное содержание антиоксидантов наблюдалось у M. nigra (4.40 мг/г) и белоплодной формы M. alba (5.56 мг/г)
