Abstract
According to the theory of A.E. Sharpenak, the depletion of the enamel of the tooth with proteins as a result of increased proteolysis is the basis of the occurrence of the carious process. One of the reasons for increased proteolysis is the accumulation of pyruvic acid in the tooth tissues.
